Dacia Lange, a Michigan native, now lives in Chicago and is a natural foods chef with over 10 years experience. She attended the Natural Gourmet Institute for Health and Culinary Arts in Manhattan; the only accredited healing and whole foods school of its kind. She did her internship at the Kushi Institute of Macrobiotics in Massachusetts, has worked on organic farms in Sonoma County and has catered for companies in the natural foods mecca of Santa Cruz, California. Her professional experience includes working with Chef Charlie Trotter in Chicago, The James Beard House in NY and Alice Waters in CA. After being a Pastry Chef she realized cooking health supportive food was her true calling. Taking her vast knowledge with her, she now incorporates healthier food choices to practical applications. The outcome is a diverse realm of flavors, textures, colors; all well balanced, beautiful and delicious. A vegetarian for 20 years, Dacia brings personal knowledge and passion to her work thru dedication to health and wellness. Dacia recognizes the intimate relationship food has on the body, while keeping her own autoimmune disease in check. You truly are what you eat and what you eat is directly related to how you feel. To honor ourselves we must honor what we eat.
